It is said that native food is evolutive. From a basic mean of survival to a gastronomic pleasure, it remains nevertheless what it has always been: a profound spiritual connection between animals, plants and humans. A whole culture expresses itself through food, from picking to eating. At the beginning, the cooking and preservation methods were basic, but effective. We were able to grill, boil or simply let the ingredients age.
Today, we benefit from all of the techniques provided by modernity to preserve and serve new recipes: cattail hearts, game of all sorts, milkweed pods or cedar jelly. We can always prepare meals in a traditional fashion while mixing them with exotic flavours. Creativity has no limits!
Our cuisine stands out from others. Recently, a native food-processing industry came out and exports its products in gourmet markets worldwide.
